Montreal Chicken Wings
24 Quebec chicken wings
MONTREAL SAUCE
Ingredients
6 tablespoons maple syrup
¼ cup butter
2 tablespoons Dion Montreal Style Chicken Spices
2 tablespoons soy sauce
2 tablespoons apple cider vinegar
2 cloves garlic, minced
2 teaspoons Dijon mustard
2 teaspoons hot pepper flakes (adjust to taste)
½ teaspoon cayenne pepper
½ teaspoon smoked paprika
Pepper to taste
START BY MAKING THE SAUCE
1 In a saucepan, heat the maple syrup, soy sauce, vinegar, garlic, mustard, chili flakes, and cayenne pepper over medium heat for 2–3 minutes.
2 Reduce the heat, then add the butter, whisking until the mixture is smooth.
3 Stir in the Montreal seasoning and smoked paprika.
4 Simmer gently for 2–4 minutes to thicken slightly.
COOKING METHOD
1. Preheat the oven to 200°C (400°F).
2. Place the wings on a baking sheet lined with parchment paper or on a rack (ideal for crispiness).
3. Bake for 35 to 45 minutes. Turn them over halfway through cooking (around 20 minutes).
4. Brush with Montreal sauce 10 minutes before the end of cooking.
5. Finish with 2–3 minutes under the broiler to caramelize nicely.
